Media Preview: Flavours Of The Palace | Emirates Palace

Mark your calendars because Thursday March 16th 2017 brings Flavours Of The Palace back to Abu Dhabi’s iconic Emirates Palace Hotel. The concept is a simple one with guests paying AED 150 to meet some of the palaces top chefs and indulge in a number of specialties from the properties fantastic repertoire of fine dining restaurants –  BBQ Al Qasr, Hakkasan, Le Vendôme, Mawal, Mezzaluna, Mezlai and Sayad.

Late last week we gleefully excepted a lunchtime invitation to the palace to attend a media preview that would be more than just an afternoon soirée and an opportunity to try these dishes ourselves. Living up to its reputation, the palace never likes to do things by halves and after a quick glass of champagne, we were dressed in aprons and chefs hats and ushered into the kitchen at Sayad restaurant to make these dishes ourselves!

We must say that our group (consisting of Jules from The Hue’s and Krichelle from Abu Dhabi Confidential) may have had the easiest task, as we were in charge of the appetiser. Under the tutelage of Italian born Federico Parravicini we soon learnt that looks can be deceiving and the intricacies that go into the plating of even the simplest of dishes is phenomenal. Whether our take on the Vitelle Tonnato (a Piedmontese dish of cold, sliced veal covering a creamy sauce flavored with tuna) was up to the high standards of the palace is anyone guess?

Going behind the scenes in a busy kitchen at the palace was certainly a fun and rewarding expereince and one and gave us not only an insight into the creative process but a new found admiration of the team and how they manage to perfectly cook and present so many immaculate plates during a busy service.

Thankfully for us we didn’t have to work an entire shift and were soon back within the familiar surroundings of Sayad with it’s blue lighting and underwater theming. Not wanting to spoil the suprises for you, we will give you pointers on a couple of dishes to look out for:

  • Honeymoon Flower Pot Garden Salad a salad that has been presented in a flower pot as if in bloom. The accompanying watering can provides the dressing and dig dip enough into the soil and you’ll find a guacamole mix that’s just ideal for dipping in those vegetable crisps.
  • Steak Sandwich: The name says it all but this sandwich with its ever so pink beef strips is simply wonderful and trust the palace to serve ketchup in tiny little tubes that resemble toothpaste.
  • Thyme Creme Brulee: Though not really a creme brulee (the top has not been caramelised) this dessert is decadent. A mild hint of thyme is completely overtaken by the contrasting flavours of the sea salt and caramel sauce.

We have had a small taster from Flavours Of The Palace and look forward to returning again on Thursday for the full event. Promising great food, great company and delicacies from partnering company Amstur Caviar, we hope to see some of you there.

Flavours Of The Palace takes place this Thursday (16th March 2017) from 7pm – 11pm at the West Wing Gazebo in the Emirates Palace. The entrance fee of AED 150 entitles guests to food and beverage vouchers of equal worth and extra vouchers can also be purchased at the event.
